Of the three major beverages[饮料] of the world ?tea, coffee and cocoa[可可饮料] ?tea is consumed[消耗] by the largest number of people. China is the homeland of tea. Tea from China, along with silk and porcelain[瓷器], began to be known to the world in ancient China and has since always been an important Chinese export[出口商品].

Chinese tea may be classified[分类] into five categories according to the different methods by which it is processed[加工]:

Green tea -Green tea is the variety which keeps the original color of the tea leaves without fermentation[发酵] during processing. This category consisits of Longjing tea of Zhejiang Province, etc.

Black tea -Black tea, known as “red tea”in China, is in the category which is fermented before baking[烘焙]. This category consisits of Qihong of Anhui Province, etc.

Oolong tea -This represents a variety halfway between the green and the black teas, being made after partial[部分的] fermentation. It is a specialty from Southeast China, such as Fujian and Guangdong Provinces.

Compressed[压缩的] tea-This is the kind of tea which is compressed and hardened into a certain shape. It is good for transport and storage. Most compressed tea is in the form of brick. Therefore, it is generally called “brick tea.”

Scented[香味的] tea-This kind of tea is made by mixing fragrant flowers in the tea leaves in the course of processing. The flowers commonly used for this purpose are jasmine[茉莉] and chrysanthemum[], among others.

世界上的三大饮料中―茶、咖啡和可可饮品―喝茶的人最多。中国是茶叶的故乡。来自中国的丝绸、瓷器,还有茶叶自古已闻名世界,而且从那时起,茶叶一直是中国重要的出口商品。

根据不同的加工方法,中国茶可以分为五大种类:

绿茶―绿茶在加工过程中不经发酵,保留了原茶叶的颜色。这类茶叶有浙江龙井等。

红茶―红茶,英语中称“黑茶”,茶叶在烘干前经过发酵。这类茶叶有安徽祁红(即祁门红茶)等。

乌龙茶―这类茶介于绿茶与红茶之间,是半发酵茶。乌龙茶是中国东南地区的特产,如福建、广东等。

紧压茶―这类茶经过压缩,定型成不同形状,以便于运输和储存。大部分紧压茶都呈砖形。因此,它们通常被称为“砖茶”。

花茶―这类茶在加工过程中把香花与茶叶拌和一起。常用的花有茉莉和等。
